Mavrolado, or "black oil," is a rare, thick, dark-colored olive oil indigenous to Cyprus, traditionally produced by drying and cooking ladolia olives. Local ladolia olives are sun-dried (sometimes until they look like raisins) and then cooked or baked before milling, giving the oil its dark color.
Known for a rich flavor and medicinal properties, it is used in salads, marinades, and traditional dishes.
It is thicker than standard olive oil and has a very strong, distinct aroma and taste. Due to its intense flavor, it is often used sparingly as a dressing for salads, on toasted bread, or in legume dishes.
