The Culinary Vision
Velissima is seeking a culinary powerhouse—a Chef who is equally comfortable masterminding a "theatrical" avocado toast at 11:00 AM as they are sourcing and aging a Wagyu ribeye for 9:00 PM. This isn't just a kitchen role; it’s a Creative Director position for our food identity. You will oversee a split-personality kitchen that demands precision, speed, and soul.
Key Responsibilities
Menu Engineering: Develop two distinct identities:
Brunch: Innovative, Instagrammable, and fresh (think global influences, house-made pastries, and elevated classics).
Steakhouse: A masterclass in protein. Focus on dry-aging programs, wood-fired techniques, and sophisticated sauces.
Event Integration: Design versatile catering menus for the Multifunction Venue that can scale from high-end finger foods to 5-course gala dinners.
Sourcing & Sustainability: Establish relationships with local Cypriot producers for seasonal produce while securing international contracts for world-class beef.
Kitchen Leadership: Recruit, train, and inspire a brigade capable of maintaining 5-star standards during the high-pressure summer season in Protaras.
Cost Control: Manage food waste, inventory, and labor costs to ensure the culinary department hits its profitability targets without compromising quality.
Candidate Profile
The Hybrid Specialist: You have a background in high-end steakhouses but possess a modern, "foodie" sensibility for the brunch market.
Technical Mastery: Deep knowledge of meat anatomy, aging processes, and charcoal/wood-fire cooking.
Operational Discipline: Experience managing high volumes (200+ covers) in a fast-paced, tourist-centric environment.
Leadership: A "lead-by-example" mentor who thrives on floor-to-kitchen synergy.
Experience: Minimum 5+ years as a Head Chef or Executive Sous Chef in a luxury hotel or renowned standalone restaurant.
